Campfire Cuisine

I love family reunions. We just got back from the annual Finch Family Reunion. The weekend was full of creatures that you wouldn't want crawling into your tent, four wheeling, river running and campfire goodies. I hope you are having fun with your family this summer. Here are some pics from our outing and recipes for when the campfire comes calling:

We found a 5 ft long blow snake hanging from a tree. After finding it, I made sure our tent zippers were securely fastened shut.

Popcorn Satchels
Place 2 tbs popcorn kernels and 2 tsp oil on an 18 inch square of heavy-duty aluminum foil. Seal the edges to form a loose pouch, leaving room for the kernels to pop. Tie a corner of the pouch to a stick with a piece of string. Shake over fire until popped.

Banana Boats

Split a banana lengthwise through the peel, making sure not to cut all the way through to the other side. Stuff with chocolate chips and mini marshmallows. Wrap each banana in aluminum foil and cook over fire until chocolate is melted, about 10-15 minutes.

Mexican S'mores

Break cinnamon graham crackers in half to form squares. Break milk chocolate bars into pieces. Roast marshmallow until it is puffed and lightly browned. Sandwich with the chocolate pieces and 2 cinnamon crackers.
